BBQ Sauce

Combine the following ingredients and bring to a boil

  • 1 cup catsup
  • 2 cups water
  • juice of 1/2 lemon
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 1 clove garlic
  • Stax Seasoning
  • 1/2 teaspoon pepper
  • 1 teaspoon mustard
  • 1/2 teaspoon hot sauce
  • 1 teaspoon oregano
  • 1 teaspoon parsley flakes
  • Dash of allspice

Short Ribs of Beef

Season with Stax Seasoning

Place on rack of broiler pan and broil until well browned on both sides

Drain off excess fat

Place in baking pan with BBQ sauce

Cover with aluminum foil and bake at 350 degrees for 1.5 hours or until meat is tender and sauce has thickened

Sautéed seafood when it is prepared correctly is unbeatable! One of my favorites is Linguini Cacciucco (Ka-Chuke-Co)

Minimal amount of olive oil in 10″ sauté pan

Lightly flour 3 16/20 shrimp and 3 large sea scallops and Stax Seasoning

Do not cook them off all the way, just brown on both sides

Drain the excess oil off with shrimp and scallops in a china cap in a colander; let them stand

Take the same frying pan that has the flavor of your seafood already in it

Place it back on the burner and add in the pan chopped Shallots Garlic that have been submerged in olive oil and sauté until flavor is released

Use Sauterne of Chablis wine with the sauté pan; hot burn off the alcohol in wine

Add 4 small cherrystone clams and five mussels along with fresh leaf basil and chopped green onions

Sauté with a splash of fresh lemon

Sauté clams and mussels in pan and bring your shrimp and scallops

Add fresh butter to make your sauce thicken

Finish with heavy cream and add linguini (be sure linguini was boiled al-dente, shocked in hot water before adding to pan)

Garnish with Asiago cheese and Italian parsley

Season all purpose flour with Stax Seasoning

Dip veal in flour

Heat pan

Add Vegetable oil and butter

Cook meat

Deglaze pan with white and chicken stock

Add lemon

Add capers

Sear, then cook 125 degrees to 140 degrees (rare)

  14. Diced Red & Green Peppers
  15. Strained Diced can Tomatoes
  16. Chicken base
  17. Chili Beans can drained
  18. Stax All Purpose Seasoning
  19. Ketchup
  20. Cooking oil
  21. Bay Leaf
  22. Hot sauce

  1. Oil in Pot
  2. Sautee onions
  3. Add ground beef
  4. 1 tsp garlic
  5. Stax All Purpose Seasoning
  6. Tbsp chili powder
  7. 4 dashes wostershire
  8. 5 dashes hot sauce
  9. 1 tsp yellow mustard
  10. 2 heaping tsps. Sour cream
  11. 1 1/2oz bourbon
  12. 1 can diced tomatoes
  13. 2 small cans tomato sauce
  14. 1 can Kidney beans
  15. 1 small can water
  16. 2 tbsp tomato paste
  17. 1 tsp chick base
  18. 2 tbsps Ketchup
